Skipping over my last idea for the “next” cinnamon-y biscuit (which was to make all six of a batch — rather than one or two — of the super-fast biscuits into the double-decker crunchy, buttery Cinnamon Biscuits*) came a brainstorm last night for these.

I did a search for a recipe online and found none! No problem; I’m happy to create my own since it’s merely a biscuit with a cinnamon crumble in the middle and top of dough. While I made twice as much crumble as needed, the extra will go in the freezer for topping the next batch because it worked! Coffee Cake Biscuits. Now wait for Trader Joe’s to find them.
