Happy New Year with Hasselback Potatoes, Vegetarian Chili and Sharp Cheddar

The title says it all, for once, but double up on the Happy New Year. Closeup shows how each slice of the hasselbacked spud has a spoonful of homemade veggie chili and the whole thing is topped with grated sharp cheddar and popped back into the oven to melt.
