
“O-o-oh, I want THAT one, please.” What a sweet sound. The honey caramel meant to fill my new Lemon Snicks did not want to stay inside the cookie, maybe because caramel wants to escape the pocket when the temperature rises to 350 degrees F. Careful tending insured the spillover did not burn, but what worked with previous versions of Snicks and caramels did not work this time. It turns out not to matter that the filling didn’t stay inside the dough during baking. Why? Because instead of the usual conformity in size, shape and look, these cookies offer a choice. “I want THAT one, please.” Nevermind that they all had the same amount of caramel.
Update: These cookies have been a hit with every family and person who has tried them. One of the testers told me that they especially liked the hard-candied bits at the edges. Hey, those tasty bits would never have been possible if the honey caramel had not escaped.
