Who knew that spreading mayonnaise on the outside of your grilled cheese sandwich instead of butter is a thing? I didn’t, but saw it somewhere and tried it with plain mayo. It delivered the normal crunch we expect to go with melted cheese but I decided to try a flavor extender. I’m a fan of a bit of chipotle with sharp cheddar and the combo with mayo on a griller is perfect for me. A teaspoon of seasoned mayo is enough. Just let the bread grab a bit of it. If rustic bread is used, a bit of the cheese will drip through into the pan and produce bits of those crunchy, fried cheese surprises.
