Autumn Leaves, Caramel-filled Mexican Chocolate Snicks

The pear and maple trees in the front yard are so pretty. Nevermind that the leaves have to be swept off the porch daily. I did that last night, yet this morning, this is what greeted me.

What do the pretty leaves have to do with a cooking blog? Pumpkin, apple and sage? Nope. If the leaves were all stirred together, the color would be CARAMEL. It was a great morning to test new cookie ideas and send them out to family for expert opinions.

The results? Mexican Chocolate Snicks, two kinds:  Salted Caramel Filled Mexican Chocolate Snicks and Chocolate Caramel Filled Mexican Chocolate Snicks. Approvals so far indicate I shouldn’t save these for the Christmas cookie collection, but, ahem, make them on a regular basis. We’ll see.

Perhaps these will join their cousins, the Salted Caramel and Chocolate Caramel Filled Cinnamon Snicks, and the Salted Caramel and Chocolate Caramel Filled Peanut Butter Snicks. A perfect trio?
