
One of my favorite nephews has recently begun a new job in Hawaii and will be moving his family there from Washington in the next week. His favorite of the the Christmas goodies is the Chewy Chocolate Mint, so I made a batch of the drop version just for him on Thursday so they’d be fresh on Christmas when he would be returning from Hawaii for a few days.
There were extras of the Hershey’s Mint Truffle Kisses and they caught my eye as I was preparing to freeze a batch of Peppermint Snicks for the week after Christmas. My thoughts went to the volcanoes on the big island at the same time, so I put a Kiss inside of some Snick dough. Then, instead of hiding the Kiss, I deliberately poked the top through the dough, rolled it in the secret sauce along with some sanding sugar to make a sparkle and popped them in the oven.
I was thinking the cookie might stay more ball-shaped and possibly some chocolate might melt down the sides, that they might look like miniature Mauna Loa and Mauna Kea, a little tribute to Hawaii and the great new job. In the end, they flattened out and the chocolate only melted inside, but they were pretty tasty. Crunchy cookie and melty goodness. No after photo, though. Someone forgot.
Both types were packed inside of a tin and it’s my understanding that they went home with him after their family Christmas dinner at my sister’s apartment. Cookies will definitely help with packing.
