New! Gooey Peanut Butter Chews; 2 Ways

If you like peanut butter, oh boy, do these chewy cookies fit the bill.

This is the newest in the line of soft, chewy and maybe gooey cookies. I dreamed about it, then got up and made it the next day to share with my drivers and physical therapists, froze some dough to check freezability (yay!) and baked the rest for part of a birthday basket referenced in the previous post.

Two ways. Plain gooey peanut butter; topped with dark chocolate disk.

I asked my daughter if she wanted me to save a few for her. “Do they have chocolate?” she asked. “I love chocolate and peanut butter.” Done. Pop a couple disks on the top before baking, maybe pop the cookie just-about-to-be-eaten into the microwave for a few seconds to remelt the chocolate and voila! Chewy, gooey peanut butter and chocolate.

One of the staff at the clinic messaged my physical therapist while we were in session, asked for the recipe after declaring her appreciation for it with an Mmmm. When I went to find her after the session ended, I told her that my recipes are proprietary and trade secrets but if she agreed not to share the recipe with anyone else (while sharing the cookies she makes with it), I would provide it on a confidential basis. (Today I hand wrote a basic non-disclosure agreement for her to sign before I provide the recipe. I just can’t help my legal training influencing protection of creative work product, and this recipe is fully my own.)

  1. I love the peanutbutter with the chocolate disks. They are unbelievably delicious & decadent. She even made a couple without chocolate disks so my puppy-dog Buster could indulge just a bit…he absolutely loved them as much as my husband and I had. These cookies are top-shelf, and should be offered as an after dinner treat at an exclusive restaurant somewhere here in Seattle.
