Thai Brown Rice & Broccoli Salad

A few days ago I treated myself to the Will Smith version of the genie in Aladdin and then takeaway from my local favorite restaurant, a place called Thai Thani Kitchen across the street from the cinema.

I am fond of their brown rice. It’s different than any other kind than I’ve had, perfectly chewy, not mushy. It’s quite divine with their peanut sauce which is, in my opinion, the second best that I’ve had in Seattle after Thai Tom’s in the University District.

There was leftover rice even after 3 days of eating the veggies in peanut sauce, but the peanut sauce was finito. A decision was made to steam some broccoli and add the cup of rice to the steamer, then chill the mixture and add some Trader Joe’s Spicy Peanut Vinaigrette and pine nuts toasted in olive oil. Lovely. Spicy. Healthy, too.
