Leftover Peeps? Shaved coconut in the fridge ready for toasting and this cake? I think it could be a new tradition since 3-layer coconut cake with cream cheese icing is one of those cakes which doesn’t get as much play as others. We’ll see how it works out next year. It’s worth making just for the aroma of the coconut as it toasts.
