Mmm, mmm. Toasted Coconut Caramel Bars

It’s raining. It’s pouring, but the kitchen scents are delightful.

I’m pretty sure Trader Joe’s didn’t think of these:

Toasted Coconut Caramel Bars, hot out of oven for the photo

when they put out their Caramel Sea Salt Baking Chips, now joined in my Toasted Coconut Bars with Sugar Babies for a Christmas cookie. Mmm, mmm. Toast the coconut until the aroma fills the kitchen. Make the brown sugar, butter and flour base with a few sprinkles of rum extract. Bake that for 10 minutes while mixing the eggy goo to top the base. Then sprinkle the toasted coconut over the goo, distribute the chips and candy, press everything down with a spatula and bake for 24 minutes. They must cool before cutting and going into containers.

Wash with warm soapy water before using to pack Christmas goodies in.

To top off the morning, the buzz around here is joy because the Seattle Seahawks won their game last night against the Philadelphia Eagles in the last half minute. It was a scorcher!
