I glimpsed a headline this afternoon announcing National Pie Day. I didn’t know there was such a thing, but there is, and so some apples from Bellingham in a brown bag inside the fridge finally found their long-intended way into a pie. In truth, pies are my least favorite things to bake, but I accepted help from Pillsbury for the bottom crust and made the filling and crumble.
The aroma of hot apple pie goes perfectly with stay-inside-because-it’s-stormy. Also, it makes a lovely dessert. Matter of fact, every piece was spoken for while the pie was still in the oven! Mark ate his 1/6th in approximately six bites, declaring it the best apple pie he’s had in his life, even if I didn’t make the bottom crust.
