Van Harte Gefeliciteerd Otto, heartfelt congratulations & Dutch Potato Cake

Today is my friend Otto’s birthday. His mother is in town for the holiday and, since they are Dutch, I arranged with the missus to make my Dutch great-grandmother’s recipe for Dutch potato cake as my contribution to the festivities and as a surprise for his mother.  I don’t know if she’ll be familiar, but the Dutch are known for creative use of potatoes, so maybe she’ll recognize this spiced chocolate cake. When it came time to write on the top, I googled some phrases, opted for this one and then hoped it would fit atop an 8″ cake.

When the missus and the girls came over to bring me the gift of a big bag of baking staples and carry the cake to the car, the seven-almost-eight year-old brought me this wonderful card she’d just made. I love it so much that I have to share.
